Ladies Finger  Also known as Okra Or Bhindi
 The superior fiber found in Ladies Finger helps to stabilize blood sugar by curbing the rate at which sugar is absorbed from the intestinal tract. It does help lubricate the large intestines due to its sizable laxative qualities. Its natural fiber absorbs water and ensures bulk in stools. This helps prevent constipation. Unlike rough bran, which could injure the intestinal tract, Ladies Finger’s mucilage soothes, and Ladies Finger facilitates elimination more comfortably by its slimy properties.
 Ladies Finger absorbs excess cholesterol and toxins (in bile acids). These, if accumulated will cause numerous health problems. Ladies Finger also assures easy passage out of waste from the body. Ladies Finger is completely non-toxic, non-habit forming, has no adverse side effects, is full of nutrients. Ladies Finger is good for summer heat treatment. Its a supreme vegetable for those feeling weak, exhausted, and suffering from depression. Ladies Finger fiber is excellent for feeding the good bacteria (probiotics). This contributes to the health of the intestinal tract. These are similar to the ones proliferate by the yoghurt in the small intestine and helps biosynthesis of Vitamin B complex. Ladies Finger is used for healing ulcers and to keep joints limber.
 It helps to neutralize acids, being very alkaline, and provides a temporary protective coating for the digestive tract.
To retain most of Ladies Finger’s nutrients and self-digesting enzymes, it should be cooked as little as possible.
But please wash all vegetables well before cutting to get rid of the pesticides or other external toxins they are vulnerable to.
Here is a popular Indian Recipe

Bhindi Do Pyaja

Canola Oil  1/4 cup
Cumin Seeds  1 tsp
Red Onion Sliced  1 whole
Ginger Julienned 2 tsp
Garlic Sliced 2 tsp
Green Chilli Sliced 2 tsp
Red Chilli Powder 1 tsp
Turmeric Powder 1 tsp
Corriander powder 2 tsp
Amchur Powder 1 tsp
Hing 1/2 tsp
Salt to taste
Lemon Juice   2 tsp
Ripe Tomato Chopped 2 whole
Cut Okra one inch pieces 3 Cups
Cilantro Chopped 3 tsp
Heat oil in a pan in med temperature.
When oil is hot add Cumin seeds.
When the Cumin seeds crack add sliced onions, Ginger, Garlic and Green chilli and saute till light brown.
Add Salt, Turmeric, Red Chilli, Corriander, Hing and Amchur powder and saute for a minute.
Add Lemon Juice and chopped tomatoes and stir for a minute.
Add the cut Okra and cook till Okra is soft, stirring Ocassionally in low – med heat.
Remove from fire, Check salt and set aside covered for 10 minutes. It helps the flavours to blend in steam.
Serve hot garnished with chopped Cilantro.
Squeeze a lemon quarter before scooping into plate will help Iron absorbtion.
